Quick, simple, tasty

SOMETIMES it's the simple things that make us happy. Take this quick, simple tasty salad for example, particularly in the summer heat. We have had an abundance of sweet blush tomatoes in our garden at home. There is nothing quite like a fresh organic tomato, especially when you have grown it yourself from a teeny tiny seed. This salad would be a great side for Christmas Day or any time you are entertaining over the festive season.

Tomato salad

INGREDIENTS:

 4 truss tomatoes  

 6 black heirloom tomatoes  

 10 pieces of serrano ham  

 4 fresh figs, quartered  

 8 large balls of buffalo cheese  

 10-15 large basil leaves. Basil pesto dressing -

 1 bunch of basil  

 2-3 garlic cloves  

 80-100g of pine nuts  

 Olive oil  

 Salt and pepper.

METHOD: First make the pesto dressing. Combine pesto ingredients in a small processor and blitz or pound in a mortar and pestle. Add more oil until pesto is runny. Season to taste.

Cut up tomatoes in all different shapes, sizes and different angles - don't be too precise. Arrange on a platter. It's best to serve tomatoes at room temperature as they are sweeter and their flavour is more pronounced.

Roll up serrano ham and place into tomatoes. Cut up figs and push into salad.

Tear up buffalo cheese and basil leaves and scatter over salad. Season with a good sprinkling of salt and pepper and a drizzle of dressing over the salad. Serves 4-8.
