Kerri's Carrot Cake
COOK up a tasty treat with this delicious carrot cake recipe.
- 4 eggs
- 2 cups sugar
- 1/2 cup oil
- 3 cups grated carrot
- 250g crushed walnuts
- 2 cups SR flour
- 3 tsp cinnamon
- 1 tsp bi-carb soda
- Combine all ingredients and mix well.
- Place in a large well greased cake tin or two small tins.
- Bake in moderate oven for 3/4 - 1 hour.
- Ice with cream cheese icing when cool.
