Downtown bacon wins four awards on the trot
PROSERPINE'S Downtown Butchery doesn't have anything else to prove to its customers.
For four years in a row they have taken out awards for the best bacon in Queensland.
This year John Collins and the team won third in the short rasher category, coming in behind Gray's Modern Meat Mart in Toowoomba and Slade Point Meat Specialists.
Mr Collins said winning the award was proof the shop was creating a quality product.
"We are quite happy with the award,” he said.
Not that things went quite to plan: The normal process of curing the meat ended up being rushed due to the impact of Cyclone Debbie.
"Normally it's a two-week process and you let it soak before you use it. It's like a good wine, it gets better with age.
"We had to rush it through this year; we did the normal processes but we just didn't let it hang as long.”
The awards were held as part of Australian Bacon Week, celebrating the best bacon made from 100% Australian pork.
More than 125 entries were received from across the country, with the judges assessing appearance, aroma and taste.
"We think we might retire after this one, we don't need to prove anything to our customers,” Mr Collins said.
Master Butchers Whitsunday in Cannonvale also won third in the full rasher category.
