From bait to great meal

EVER wondered how your beautifully cooked fish finds its way onto your plate?

Well wonder no more with Fish D'vine's Bait to Plate lunch giving you not only a great meal, but the full story as well.

"I actually come out into the restaurant, set up a little kitchen and prepare the food in front of the guests so they can see how it's done and get up and participate," Fish D'vine co-owner Kevin Collins said.

"We call it an interactive

seven-course lunch where

people can get up and participate if they want to."

You even get to go right back to the beginning, with the fisherman who caught your meal on hand to offer their side of the saga.

"They're going to be there to talk about how they catch the fish, why they fish for it and at what times of the year," Mr Collins said.

"This time I'm doing it on things caught in Repulse Bay, so our inshore fisheries."

You're assured of a fresh fillet as well, with the catches coming straight from the boat.

"It really is that reactive that I'll start taking delivery of what gets caught on Thursday and on Friday I'll form my

menu for what comes in," Mr Collins said.

You can take all these tips home with you for your own first-class restaurant.

"It's about introducing the kinds of species that you just don't see on restaurant menus very often," Mr Collins said.

"And it's really trying to get people interested in buying

local fish and cooking it themselves."

Keep up to date on the catches as they come in by visiting baittoplate.com.au.

Bookings are essential for the interactive lunches.
