Elimination diet knocks off kilos for Nicole
NICOLE Connolly claims to have found the secret to rapid weight loss, and it doesn't necessarily mean you need to spend hours in the gym.
As a young woman, she enjoyed high school home-ec classes and she spent hours cooking in the kitchen with her mum and grandmother.
At university she became the unofficial dorm cook.
But when a relationship with a man she moved to North Queensland for didn't work out, Ms Connolly fell in love with food instead.
But before long she began putting on weight and no matter how much she exercised, she couldn't shift the kilos.
Ms Connolly decided to move to Kingaroy and it was there she met the love of her life.
Before long they were set to be married and like all brides Ms Connolly was desperate to lose weight.
"At one stage I was having trouble fitting into size 14 clothes," Ms Connolly said.
"I had no energy, my skin was awful and I was cranky all the time."
She continued exercising at five hours a week and changed her diet to cut out sugar and fat.
"I lost a few kilos, but not quite enough," she said.
"Then I decided to do an elimination diet, which is restricted protein, restricted fruit and vegetables and there's no exercise allowed.
"I lost 10 kilos in 21 days."
Slowly she began introducing other foods back into her diet, and since then began her own food blog to share her experiences with others.
"It's okay to go through a health journey and there isn't one approach to a healthy diet because everyone is different. It's about listening to your body," she said.
She now knows she has an intolerance for some nuts and buys the freshest ingredients possible.
"People think of healthy food and they think, that must taste bad, but it's not true; good food tastes great."
